A UNIQUE LOCATION

The Minervois landscape is breathtaking: a geological chaos of mountain and valley, created by centuries of erosion. It is also one of the most heterogeneous regions in the Languedoc, with select parcels of old bush vines as well as trellised, delivering tiny berries of remarkably concentrated fruit. 
Due to the significant variances in soil, elevation and mesoclimate (summers are overall warm and dry), winegrowers have divided the appellation into five subregions. These include Côtes Noires in the far northwest of Minervois, La Zone Centrale, Le Causse in the northeast, and La Livinière.
Awarded its own appellation status in 1995, this calcareous terroir consistently delivers some of the finest red wines in the Languedoc. We cultivate vines in three distinct subzones, to fully express the diversity of Minervois’ soils.

THE TERROIR

The greater the terroir, the more carefully we need to tread. That is why we keep man-made inputs to an absolute minimum; grapes are hand-harvested and subject to a very precise and gentle maceration in concrete tanks, to avoid over extraction. We also often use a percentage of whole bunches in the fermentation, as ripe stalks bring freshness and structure to the wine.
The ageing of our wines, meanwhile, has been fine tuned to the nuances of each vineyard block. Certain wines are matured in oak barrels, while others will suit the gentle oxidation of concrete eggs, preserving primary fruit aromas.
